March is an important time for our gardens. With the arrival of spring, our resorts team will start to sow seeds ready for the main growing season, as the sun begins to warm. Seasonal staples including cherry blossoms, crocuses and daffodils all spring up and offer some light relief from the colder months. The hardy purple sprouting broccoli has now flourished and is ready for picking, where the individual flowers are cut from each spear.
Flavour of the month
The extremely fresh purple sprouting broccoli is an ideal ingredient for celebrating the new season. Delicious barbequed and served with a homemade hollandaise sauce, the longer and leafier version of the more traditional form offers a more earthy flavour and colourful addition to a dish. In the warmer months, we also serve it with dishes such as Elgin lamb and kelp pesto.
