It is that wonderful time of year again when the leaves are slowly unfurling and flower spikes are bursting into bloom. In other words, it is a great time to visit the Torridon resort gardens and resort. The apple blossom is on the cusp of exploding into those delicate pink and white flowers which arrive with just a hint of scent to attract the bees. However our Amelanchier, or Snowy Mespilus, is already in full bloom, every twig smothered in blossom. This west coast plant is a great shrubby tree which doesn’t seem to mind the odd salty breeze blowing in off the Atlantic. Its other great glory, arriving throughout June and July, will be a bounty of delicious sweet black berries which – if the birds don’t get to them first – we should be able to work into a sweet dish in the Torridon restaurant.
