Resort Head Chef Danny Young oversees both the 3 AA Rosette 1887 Restaurant and the Bo & Muc Brasserie. Danny’s belief is that dining is an experience, every plate should evoke a sense of excitement and connection to the Highland landscape through seasonality and the finest local ingredients.

In creating his menus Danny is often inspired by the connection to places and memories and aims to create a sense of nostalgia through his food.

Danny started his career at 16 at Northcote, where he worked for over 13-years with time through every section of the kitchen - Eventually becoming Head Chef.

"I’m lucky to work in places where the landscape and ingredients change with the seasons. I'm passionate about finding the very best of Scotland's produce and improving the sustainability of our restaurants, I love to help guide the team of chefs around me letting them shine with new ideas and dishes.
