Chef Bruno has been working his magic on a whole Tamworth pig for The Torridon restaurant and the results can be spotted on the menu. For example, you might like to try a plate of cuts served with pomme purée, creamed cabbage and pork and cider jus. These include Tamworth fillet wrapped in pancetta, a pressed terrine of slow-cooked braised shoulder, confit belly and a strip of homemade black pudding. It is a great treat reflecting the creativity and dedication of the kitchen team but just in case that isn’t enough, you can finish with an assiette of chocolate desserts – white chocolate brulee, milk chocolate tart with chocolate mousse and dark chocolate marquise with orange and brandy.
