Newly arrived at The Torridon Whisky Bar this week, Gin Mare is the latest bottle to grace our growing collection of specialist gins.
It is distilled in a small fishing village on the Costa Dorada in Spain and alongside more traditional gin botanicals such as juniper, bitter orange peel, Seville orange peel, lemon peel, cardamon and coriander, there are four locally-sourced ingredients that are not quite so common in the spirit: Arbequina olives, basil, rosemary and thyme.
All those mentioned except the citrus ingredients are macerated individually for 24 to 36 hours in neutral grain alcohol before being distilled in a copper pot still.
The three citrus botanicals, on the other hand, are macerated as fresh peel in neutral grain alcohol for no fewer than 300 days before distillation.
It is not until all the botanicals have been distilled individually that they finally get to meet each other in the blending process.
Once poured, the four distinct Mediterranean botanicals are evident immediately upon nosing, with the rosemary in particular standing out.
